Girlfriend? You're getting rude! All right. To mate two Chao, each of them has to eat a the Heart fruit. Its good because, the offspring will share its parents ability rankings- Hard to notice in Sonic Adventure DX though. You can make any two Chao mate, as long as they're not so sleepy (you can but its hard), they must be an Adult (not Chaos or Child).
