You need Sonic adventure 2 Battle game. Take Chao to Kindergarten in SA2 (Sonic adventure 2), make it learn a lesson, then transport Chao back to SA:DX with the Gamecube Link Cable and Gameboy Advance.
Your Chao can play the instrument it learnt in Kindergarten.

Chao karate is only in Sonic Adventure 2: BATTLE
