Chao Karate is only in Sonic Adventure 2 Battle.
You need to go to the Chao Stadium (behind the waterfall in the Normal Garden). Then select "Chao Karate". Then select Tournament. (Interleague game is for your own chao against each other.) There are four levels: Beginner, Standard, Expert, and Super. Super is only for a Chao that completes the other three levels.
In the Karate, when the Zeal goes low, press A repeatedly to make it full again.
Make sure your Chao's stats are at level 6-7 before starting. The stats for Karate are:
Swim: Defense
Fly: Dodging
Stamina: Length of health bar
Run: Speed
Power: Strength
