A chao can undergo second evolution instantly after its first. To speed up the process feed it fruits. Second evolution is a gradual change- not one where the Chao goes into a coccoon, but a Change over time.
Sometimes, however, you might experience a fault in the 2nd evolution and your Chao is not becoming a perfect Shadow Chao or Nights Chao or Sonic Chao whatever. For examply you are giving your Sonic Chao a lot of green Chaos drives but it isn't getting any bluer. There are two solutions:
1) Give it another type of Chaos drive- If it looks like it is going bluer, keep giving it that Chaos drive type
2) Wait another hour or so, and feed it nuts to speed up the second evolution process.
