When you pet a chao multiple times when they just got born, why do their emotiballs get darker every time they form a heart? Are they spoiled?

Ahhh, you're pretty astute to notice that... It changes color depending on whether it's turning hero or dark (lighter means hero, darker means dark).

Ok, so what happens is, if you pet them with hero characters, they go more towards the hero side; dark people, they go to the dark side.
